Autumn is pumpkin time: pumpkin soup - recipe

The temperatures are getting cooler, the days are getting shorter and the forest is becoming more colourful again - autumn is in full swing. And as the saying goes: autumn is pumpkin time! That's why we've prepared a delicious pumpkin recipe for you. What better way to round off a beautiful autumn day than with a tasty pumpkin soup? We'll show you how to make creamy pumpkin soup in no time at all. Now it's just a matter of getting your hands on the pumpkin and off you go!

Recipe

You will need the following ingredients for 3 portions of pumpkin soup:

- 500 g pumpkin (e.g. Hokkaido)
- 300 g potatoes (peeled)
- 2 shallots or onions
- 30 g butter
- 750 ml water
- 15 g vegetable stock (approx. 3 tsp)
- 100 g crème fraîche
- 1 tsp salt
- 1 teaspoon cayenne pepper
- 1 pinch of nutmeg

 

And this is how it works:

Step 1

Firstly, cut your pumpkin in half with a sharp knife and peel it if necessary. Then scoop out the pumpkin with a spoon and remove the core. Now cut the pumpkin into pieces of roughly the same size. Make sure to keep the pieces small to shorten the cooking time.

Step 2:

Now it's the potatoes' turn. Peel the potatoes and cut them into pieces about the same size as the pumpkin. Then cut the two onions into large pieces.

Step 3:

Now heat the pan and add the butter. When the butter has melted, it is time to add the onions. Sauté the onions until they turn translucent. Then add the chopped pumpkin and potato pieces and fry briefly. Deglaze the fried ingredients with water and stir in the vegetable stock. Then bring the soup to the boil with the lid on!

Step 4:

When the soup is boiling properly, turn the hob down to a low heat and leave the ingredients to cook for a further 5-8 minutes. When the pumpkin and potatoes are soft and cooked, remove the pan from the heat and puree all the ingredients with a hand blender. Puree until you have a creamy soup.

Step 5:

Return the soup to the hob while it is still warm and stir in the crème fraîche. Now add the spices (salt, pepper, nutmeg) and stir the soup well. Et voila - the pumpkin soup is ready to serve.
