Light salads and bowls
1. colourful quinoa salad with vegetables
Ingredients:
- 200 g quinoa
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- 150 g cherry tomatoes, halved
- 1 avocado, diced
- A handful of fresh parsley or mint, chopped
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt and pepper to taste
Preparation:
- Cook the quinoa according to the packet instructions and leave to cool.
- Mix the vegetables and herbs in a large bowl.
- Add the quinoa and mix well.
- Flavour with lemon juice, olive oil, salt and pepper.
2. mediterranean bowl with feta and olives
Ingredients:
- 200 g couscous or bulgur
- 1 small courgette, sliced
- 1 red pepper, in strips
- 100 g feta cheese, crumbled
- 100 g black olives
- 1 handful of fresh rocket
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Preparation:
- Prepare the couscous or bulgur according to the packet instructions.
- Fry the courgettes and peppers in a pan with a little olive oil until lightly browned.
- Place the couscous or bulgur in a bowl, add the roasted vegetables, feta, olives and rocket.
- Flavour with olive oil, oregano, salt and pepper.
3. summer melon salad
Ingredients:
- 300 g watermelon, cut into cubes
- 200 g feta cheese, diced
- 1 handful of fresh mint, chopped
- Juice of 1 lime
- 2 tbsp honey (optional)
- Pepper to taste
Preparation:
- Arrange the watermelon in a bowl.
- Sprinkle with feta and mint.
- Sprinkle with lime juice, honey and pepper.
4. Greek yoghurt with berries and nuts
Ingredients:
- 250 g Greek yoghurt
- 150 g mixed berries (e.g. raspberries, blueberries, strawberries)
- 30 g nuts (e.g. almonds, walnuts), roughly chopped
- 1 tbsp honey or maple syrup
- A pinch of cinnamon (optional)
Preparation:
- Put the Greek yoghurt in a bowl.
- Arrange the berries and nuts on top.
- Drizzle with honey and cinnamon.
5. courgette pasta with pesto and cherry tomatoes
Ingredients:
- 2 large courgettes, spiralised or cut into thin strips
- 150 g cherry tomatoes, halved
- 4 tbsp pesto (homemade or bought)
- 2 tbsp pine nuts (roasted)
- Fresh basil for garnish
Preparation:
- Briefly fry the courgettes in a pan (approx. 2-3 minutes) until they are slightly soft.
- Add the cherry tomatoes and pesto and mix well.
- Serve with pine nuts and fresh basil.
