Pumpkin soup with ginger and coconut - our autumn classic

Ingredients
- - 1 pumpkin (approx. 1.5 kg)
- - 2 onions
- - 2 cloves of garlic
- - 1 piece of fresh ginger (approx. 3 cm)
- - 400 ml coconut milk
- - 1 litre vegetable stock
- - 2 tbsp olive oil
- - Salt and pepper to taste
Preparation
To start, peel the pumpkin and remove the seeds. Next, cut the pumpkin into small cubes, roughly chop the onions and garlic, and peel and finely chop the ginger. Now sauté the onions, garlic and ginger in a large pan with olive oil until they are fragrant and lightly golden brown.
Next, add the diced pumpkin. Fry them together with the onions and ginger for about 5 minutes. Then pour in the vegetable stock and simmer, covered, for about 20-25 minutes until the pumpkin is soft. As soon as the pumpkin is soft, puree everything into a soup until it is nice and creamy and stir in the coconut milk. Finally, flavour the soup with salt and pepper.
