Summer refreshment made easy - cucumber cold dish

The southern Spanish vegetable soup gazpacho is particularly well-known, but various cold milk bowls are also served on hot days in Turkey and the Balkan region. If you're looking for a refreshing alternative to hot soups for the hot summer months, this recipe is perfect! We'll show you how to make a deliciously refreshing cucumber cold dish in just a few steps.

Basic ingredients:

  • One kilo of cucumbers
  • 300g yoghurt
  • 750ml buttermilk
  • 150g crème fraîche
  • One clove of garlic
  • 2 bunches dill
  • Salt and pepper
  • Lemon juice

Preparation

Step 1:

Peel the cucumbers, cut in half and remove the seeds with a spoon.

Step 2:

Finely grate the cucumber halves. Peel the garlic and press through a garlic press.

Step 3:

Mix the yoghurt, buttermilk and crème fraîche together.

Step 4:

Wash and chop the dill, add to the yoghurt and season with salt, pepper and lemon juice.

Step 5:

Fold the cucumber mixture into the yoghurt and place in the fridge for at least 30 minutes.

Step 6:

Garnish the cucumber cold dish as desired (e.g. dill, basil, a dollop of yoghurt or fresh cucumber slices) and serve cold.
