Springtime is asparagus time: crispy asparagus with poached egg

Asparagus? Asparagus! We're in the middle of asparagus season, so what could be better than delicious, fresh asparagus topped with a poached egg? Exactly: NOTHING. That's why today we're going to show you how you can easily prepare this classic asparagus dish and tell you why you should definitely savour the asparagus season. Let's get started!

Asparagus - the king of vegetables

Some of you may have heard it before: asparagus is also known as "King of the vegetables" is well known. And rightly so, because asparagus not only tastes delicious and looks unique, the vegetable is also extremely healthy. Asparagus contains only a few calories and is full of minerals and vitamins. Whether green or white - both varieties are equally healthy.

To the asparagus recipe

Now that we have clarified how healthy asparagus actually is, you definitely deserve a delicious asparagus dish.

You will need the following ingredients for two portions of this classic asparagus dish: 

- 250 g asparagus, green
- 2 eggs
- 5 g dill tips
- 80 g mayonnaise
- 2 tbsp white wine vinegar
- 1 pinch of salt
- 1 pinch of pepper

This is how it works:

Dip

Mix the mayonnaise with the dill tips, a pinch of salt and a pinch of pepper.

Asparagus

Cut off the woody ends of the asparagus. Then bring the asparagus to the boil in a pan of salted water. Cook the asparagus until al dente and remove from the water after 5-6 minutes.

Eggs

Add the white wine vinegar to the asparagus water and poach the eggs in the gently simmering water. Then place the eggs in a cup and let them slide quickly into the water and cook for about 2 minutes.

When the individual components of the dish are ready, you can finally serve. Divide the asparagus between two plates and pour the homemade sauce over it. Finally, place the poached eggs on top and sprinkle with a few dill sprigs for a touch of green colour. Et voila - you have a light dish that is perfect for spring.
