Fresh and healthy: summer rolls with peanut sauce - here's how to make them

Temperatures are slowly rising and the long-awaited summer is drawing ever closer. Especially on warm days, we often crave a fresh dish that is easy to digest and contains lots of healthy nutrients. What could be better than delicious summer rolls with a tasty peanut sauce? Summer rolls are not only incredibly tasty, they are also very healthy and their colourful filling makes them look really tasty. If you're looking for a light and healthy dish for the hot summer months, this recipe is just perfect! We'll tell you how you can easily make your own summer rolls with peanut sauce - let's get started!

One thing first: The great thing about summer rolls is that you can fill them to taste with whatever ingredients you have at home anyway. So there are no limits to your creativity! It's no wonder that summer rolls have become a favourite party food, as every guest can put together their own rolls however they like. To give you some inspiration, we will reveal a delicious basic recipe that always works and can be spiced up with other ingredients if required.

You will need the following ingredients for 2 portions:

Summer rolls:

- 10-15 g cooked rice noodles
- 5-8 sheets of rice paper
- 1 carrot
- 1 avocado
- ½ Cucumber
- ½ Paprika
- 5-8 green salad leaves
- 1 handful of basil
- 1 handful of coriander (optional)

Peanut sauce:

– 4 Tbsp unsweetened peanut butter / peanut butter
2 tsp soy sauce
- 1 pressed garlic clove
- 3-4 tbsp warm water
- ½ tsp Sriracha

And this is how it works:

Step 1:
Firstly, prepare the glass noodles by boiling them in hot water with a pinch of salt. Then peel the carrot and wash the cucumber and pepper before cutting the vegetables into thin strips. Deseed the avocado and cut it into fine strips. Then wash the lettuce leaves, basil and coriander and drain the ingredients briefly on a piece of kitchen paper.

Step 2:
Now it's time to prepare the sauce. Simply place all of the ingredients listed in a blender and blend until you have a creamy, smooth sauce.

Step 3:
Now take the rice paper sheets and place them in a round bowl or large pan of warm water for about a minute. Leave the rice paper to soak and then place it on a large plate. Dab the rice paper leaves with a damp kitchen towel.

Step 4:
Take a little of your prepared ingredients and place them in the centre of the rice paper. Drizzle about a teaspoon of the peanut sauce on top. Once all the ingredients are positioned on the rice paper, fold in the side edges and carefully roll from the bottom upwards. Make sure that you roll up the roll tightly so that it holds together well.

Et voila - Your summer rolls are ready! Arrange the rolls on a plate, pour the remaining peanut sauce into a bowl and garnish with a little coriander, sesame seeds or spring onions.
