Christmas is not only the festival of love, but also the festival of flavours. Which flavour should definitely not be missing during Advent? Without a doubt: speculoos! The Christmas biscuits not only taste heavenly and aromatic, they are also perfect for making delicious desserts. We have a great speculoos recipe for you that is quick and easy to make and also rounds off any Christmas menu perfectly. True to the motto "The best comes at the end", this homemade speculoos tiramisu will not only delight you with its great appearance, but also with its Christmassy flavour. Now it's just a case of: get the biscuits ready - go!
Christmas in a glass: speculaas tiramisu
You will need the following ingredients for 6 glasses of this delicious layered dessert.
For compote and potions:
- 150 ml strong coffee
- 2 apples (approx. 400 g)
- 2 tbsp sugar
- 3-4 tbsp lemon juice
- 1 pinch of cinnamon
- 150 g speculoos
For the cream:
- 2 egg yolks
- 50 g sugar
- 1 pinch of salt
- 500 g mascarpone
- 125 g quark
- Cinnamon for dusting

And this is how it's done!
Step 1:
Boil the coffee and then leave to cool. Then peel, core and finely dice the apples. Melt the sugar in a non-stick pan without adding any fat until you have a light-coloured caramel. Then add the lemon juice, diced apples and cinnamon. Leave to simmer for 2-3 minutes over a medium heat.
Step 2:
Meanwhile, beat the egg yolks with the sugar and salt for at least 2 minutes until frothy. Briefly stir the mascarpone and quark with a whisk until smooth and then fold into the egg mixture.
Step 3:
Now take 2/3 of the biscuits, break them up roughly and divide them between the prepared glasses. Then spread 1 tablespoon of coffee over each of the speculoos crumbs. Then add 1 tbsp of the diced apple on top. Spread about half of the cream over the bottom layer. Then fill the glasses with the rest of the crumbs, the drink and the diced apples. Cover with the remaining cream and chill.
Step 4:
Take the glasses out of the fridge just before serving and sprinkle a little cinnamon on top. If you like, you can use biscuit moulds and sprinkle Christmas motifs on the speculaas tiramisu.
