The days are getting shorter, the leaves are falling and it's time to indulge in delicious, warming dishes. When it comes to autumnal soups, pumpkin soup is an absolute classic. This recipe for pumpkin soup with ginger and coconut milk is the perfect combination of creamy texture and an intriguing range of flavours. The sweet, earthy flavour of the pumpkin is combined with the invigorating spiciness of the fresh ginger and the silky creaminess of the coconut milk. Next, cut the pumpkin into small cubes, roughly chop the onions and garlic, and peel and finely chop the ginger. Now saut\u00e9 the onions, garlic and ginger in a large pan with olive oil until they are fragrant and lightly golden brown.<\/p>\n<p class=\"p1\">Next, add the diced pumpkin. Fry them together with the onions and ginger for about 5 minutes. Then pour in the vegetable stock and simmer, covered, for about 20-25 minutes until the pumpkin is soft. As soon as the pumpkin is soft, puree everything into a soup until it is nice and creamy and stir in the coconut milk. Finally, flavour the soup with salt and pepper.<\/p>\n<p class=\"p1\"><span class=\"s1\">There are no limits to your creativity when arranging the soup! <b>Our recommendation:<\/b> <\/span>Serve the pumpkin soup in bowls and top with pumpkin seed oil and a few roasted pumpkin seeds. It goes perfectly with fresh baguette or toasted bread. And now you've conjured up a warming autumn soup!<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">Serve the pumpkin soup in bowls, garnish with a splash of coconut milk and a hint of ginger if desired.
